What are Your Breakfast Goals?

 

My goal is to enjoy a variety of wholesome food when it comes to breakfast, but it's a challenge to balance this with our hectic weekday routines, right? I mean "ain't nobody got time for that". But I've figured out a way to keep it interesting while I make sure I get the right amount of good stuff my body and sanity needs without bursting my daily calorie count. The idea is to enjoy a weekend bake day, what better way to practice or show-off those kitchen skills right, so let's start with something fun and easy.

 

 

 

Muffin is your friend

Store bought muffins taste like heaven but loaded with sugar your body does not need. So why not make a healthy version to go with your morning coffee or afternoon tea? Enjoy however you like it and keep the rest for you to share or stash it for yourself for the rest of the week. (Great alternative for snackers like me too, but try not to finish it all at once, lol)

 

The ingredients are literally basic

6 tray recipe (double up for a dozen)

1 banana, mashed until smooth

1 egg

½ teaspoon vanilla

¼ cup honey - more or less, how sweet you like it.

1 teaspoon cinnamon powder

½ nutmeg powder 

¼ teaspoon salt

½ cup Greek yogurt

1 cup milk

1½ cup oats

1 teaspoon baking powder

 

Add muscle?

1 scoop unflavoured protein powder

Use vanilla or chocolate too if you wanna experiment flavours

 

If you are not allergic...

Add a scoop of nuts!

Almonds, cashew, walnut, sunflower seeds, you know what you like ;)

 

Fruits & berries? Why not?

Strawberries? Blueberries? Apples? Blackberries? Raspberries? Mango? Even peach? 

Customise however you like.

 

Prep it like it's hot!

Preheat oven to 350ºF/180ºC

Use a bowl or whatever that works for you, mash your banana until mostly smooth.

Add egg and mix in the rest too.

 

Layer like it's cake!

Fill the muffin tray quarter of the way full.

Add in your nuts/fruit then fill again to the top with batter.

Decorate again with nuts and fruit. (Never leave it bare I say.)

 

Wait for iiiiit. 

Bake for 30 minutes as you clean up.

Allow to cool before you take pictures.

Now show it off on your Insta and maybe show your process on your IG story. ;)
